Fluffy Purple Sweet Potato Ube Buttermilk Pancakes



Pancake Ingredients:

  • 250 g All Purpose flour

  • 20 g brown sugar

  • 8 g baking powder

  • 4 g salt

  • 1 1/2 pack of potato puree (save the other half for sauce)

  • 250 ml milk + 1 TBSP apple cider vinegar

    (or use 250 ml buttermilk if you have on hand!)

  • 100 ml milk

  • 30 g melted butter

  • 3 room temperature eggs, separated

  • 1 tsp vanilla extract

Pancake Directions:

Mix 250 ml milk + 1 tbsp apple cider vinegar, set aside. Whisk together dry ingredients (AP flour, brown sugar, baking powder, and salt) in a large mixing bowl. In a separate bowl mix together egg yolks, purple potato ube puree, melted butter, vanilla extract, and 100 ml of milk-not your buttermilk mixture, this comes later! With rubber spatula, gently mix the dry ingredients into the wet, then add in the buttermilk, stirring just you cannot see any big clumps of flour. Beat egg whites with electric whisk (or by hand if you have extra time and stamina) on medium to high speed until egg whites form medium peaks on whisk when removed from bowl. Gently fold in whipped egg whites to your batter until there are no more egg white streaks. Let batter rest while heating a lightly oiled pan over medium-high heat. Reduce heat to low and scoop in your pancake batter to desired size. Cover with lid and cook just until bubbles cover the whole surface of the pancake. Carefully flip pancakes and cook until desired texture is achieved. Stack and top as desired. Our favorite way to enjoy these is with one of our delicious sauce options. Serve with a dollop of whipped cream, fresh fruits, and coconut flakes .



Notes:

  • Cooking low and slow ensures perfectly purple pancakes. Using butter will brown your beautiful purple pancakes, a non stick oil is the best option.

  • Covering pancakes creates the necessary environment for your pancakes to fluff.

  • Pancake batter is sensitive to over mixing, be gentle.

  • Only flip your pancakes one time, as they deflate if flipped too much.
