What is Ube?

Ube, known as purple yam, is a star ingredient in Hawaiian and Filipino cuisines. Praised for its sweet flavor and striking color, ube adds a delicious twist to traditional recipes. Recently, ube's popularity has surged in Western cuisine. It can be found in desserts like ice cream and pastries. Ube is also commonly combined with coconut, as their flavors blend together to create a rich, creamy, and tropical taste that enhances desserts and beverages alike. This delightful pairing is often found in various dishes, including ice creams, cakes, and traditional Filipino delicacies.

Ingredients You'll Need

To create this creamy coconut purple sweet potato ube sauce, gather the following ingredients:

  • 1/2 pack of purple potato ube puree (about 200 grams)

  • 1/4 cup of coconut condensed milk

  • 1/4 cup of coconut milk

These ingredients are far from basic, they deliver a punch of flavor and nutrition, making this sauce a delightful alternative to traditional syrups.

Step-by-Step Guide to Making Your Sauce

1. Combine the Coconut Milks

Begin by pouring the coconut condensed milk and coconut milk into a saucepan. Place the pan over low heat, stirring gently to mix. Your goal is to warm the milks, not to boil them. Keeping the heat low prevents the milk from scalding, preserving the smooth texture of the sauce.

2. Add the Purple Sweet Potato Ube Puree

Once the coconut milk mixture is warm, remove the pan from the heat and stir in the purple sweet potato ube puree. You should see a lovely lavender colored sauce forming. If you desire a bolder ube taste or a deeper purple color, simply add more puree to match your preference. This flexibility allows you to create a sauce that is matches your personal taste.

3. Chill or Serve Warm

You can enjoy the sauce warm or pre-make it the night before. If you serve it warm it will be thin, it thickens in the fridge over time. Let the sauce cool before transferring it to an airtight container. It can last up to 4 days in the refrigerator. We prefer to make it the night before and serve it with our Fluffy Purple Sweet Potato Ube Buttermilk Pancakes. When it's breakfast time, just reheat the sauce in the microwave. Use 10-second intervals and stir in between until it reaches your desired warmth.
